When Life Gives You Lemons

Lemon Pie recipe

If you love anything sweet and a light dessert, this lemon pie will become a new favorite or weekly dish in your home. I found this recipe in the lovely Magnolia Journal which is a magazine that offers a fresh perspective for your home and lifestyle. This issue of the journal was focused on living a life of simplicity. Joanna Gaines dives into the tedious topic that no one enjoys confronting, spring cleaning. She provides helpful tips in how you can tackle each room of your home with a new mindset and being left encouraged and refreshed. My first step to spring cleaning was making this lemon pie for my husband. It definitely became an immediate favorite for us and will not be the last time we will have it in our home. It was a perfect way to bring in the warm weather of spring and forget about the cold of the winter. The best part of this dessert is the simplicity. It can be made during a hectic, busy week or given at a party you are hosting for friends.

Ingredients:

Nonstick spray for baking

1 1/2 cups crushed graham crackers (21 squares)

1/3 cup sugar (used for crust)

6 Tbsp. butter, melted

3 cups sweetened condensed milk (two 140z cans)

3 egg yolk*

2/3 cup lemon juice

Dash of salt

1 small carton (1 cup) whipping cream

2 Tbsp. sugar (used for whipping cream)

1 tsp. Vanilla

Lemon Slices, for garnish

Lemon Zest, for garnish

Mint Sprigs, for garnish

Directions:

Preheat oven to 350 F and lightly coat a pie dish with nonstick spray

Combine the crushed graham crackers, 1/3 cup sugar, melted butter. Mix well and press into prepared pie dish. Bake for 8 minutes

Combine condensed milk, egg yolks, lemon juice, and salt. Beat on medium speed for 4 minutes and pour mixture into baked pie crust. Bake for 10 minutes

Cool pie on counter for 3o minutes

Place in the refrigerator at least 1 hour or until set

Mix whipping cream, vanilla, and sugar until it is fluffy. Spread on cooled pie with lemon zest, lemon slices, and mint sprigs
